Breakfast tofu icecream

Ok, I was really skeptical about this. I’m not a huge fan of tofu, but a friend (who also doesn’t like tofu) gave me some to use because she said she wasn’t going to use it up. So I thought I would give it a go and it actually was delicious and so filling because tofu is full of protein. Even both my husband and son enjoyed this. It comes out like a soft serve if you eat it straight away, or chuck it in the freezer for the day and it’s more like icecream.

Ingredients

GF DF

100g firm tofu

1/4 cup peanut or almond butter (or combo of both)

1 frozen ripe banana

2 tablespoons cocoa powder

1/2 teaspoon of vanilla bean paste

pinch of salt

Instructions

Put it all in the food processer for a few minutes until it comes out smooth! Enjoy
