Buckwheat porridge

I love to make this in my pressure cooker and so its right there ready to eat in the morning, but you can also make it on the stove. Makes for something different other than porridge.

RECIPE

GF DF Serves 4

Ingredients

  • 1 cup buckwheat groats

  • 1 1/2 cups almond or coconut milk

  • 1 1/2 cups water

  • 1/4 teaspoon vanilla bean paste

  • 1/2 teaspoon ground cinnamon optional

  • 2 dates chopped

  • One banana chopped

Instructions

Put your milk, water buckwheat and vanilla, cinnamon, dates and banana into a pot on medium. Once boiling, turn down the heat and stir occasionally for about 10 mins. If it gets dry put a little bit of water / milk in and cook for 10 mins.

Add some toppings such as fresh berries, yoghurt or ground flaxseed / chopped nuts.
