Tomato Veggie Soup

Super easy, and delicious. Perfect for a cold winter day. If your organised you could even serve it with some home made bread, if you’ve put the dough together the night before. Enjoy

Ingredients

GF DF Serves 6

2 tablespoons olive oil

2 medium onions, chopped

4 carrots - diced

1/2 bunch of celery chopped

1 capsican chopped

1 bottle of passata (480g)

1 medium kumara chopped

1/4 pumpkin chopped

1 can butter beans or any white beans or lentils

1L of stock (veggie or chicken)

2 big handfuls of spinach

1 teaspoon oregano

1 teaspoon rosemary

1 teaspoon basil

1/2 teaspoon salt

1/2 teaspoon chilli flakes

Instructions

Sautee onion in olive oil, for 4-5 mins, add the carrots and celery and sautee for 5 extra minutes. Add all the remaining vegetables in except for the spinach and cook until reaching a boil, then simmer on medium heat for 10- 15 minutes, until pumpkin / kumara is soft. Then stir in spinach at the end and add salt and pepper. Crumble some feta on top. Enjoy.
