Kid Friendly Potato Fritters (with not so kid friendly greens…)

Got some leftover mashed potato and a bit of grated carrot that your about to throw out? Make this….

RECIPE

Serves 4 DF GF

Ingredients

1/2 cup milk (almond or dairy)

1 cup flour (wholemeal spelt or 1/3 coconut flour + 2/3 tapioca flour if gluten free)

1 teaspoon baking powder

1/2 teaspoon salt

2 eggs

1 cup corn or peas or mixture of both

1 cup mashed potato

1 cup grated carrot

1/2 cup chopped herbs (basil parsley or coriander) or 1 teaspoon mixed dried herbs

3 spring onion stalks chopped

1 can chickpeas

Few handfuls of chopped spinach

1/4 cup of chunks of feta

Instructions

Mix all ingredients together. Heat up your pan to medium with 1 tablespoon extra virgin olive oil. Bring the heat down and put in 1 tablespoon mixture at a time. Cook for 2 mins per side then place in the oven for 10mins on 180C. 

At the end I just quickly sauteed some greens while the fritters in the oven as a side and served with some harissa (I used Nadia Lim recipe) mixed with coconut yoghurt.
