Kid Friendly Chicken Curry
I love this chicken curry. Its super tasty, kid friendly and can be made low carb, vegan and is freezer friendly and absolutely jam packed with veggies!!
RECIPE
3-4 servings, GF, DF
Ingredients
2 tablespoons coconut oil
350g chicken breast or thigh cut into cubes
1 can chickpeas
1 can coconut milk (preferably with the ingredients - just coconut and water)
1 onion
3 carrots
200g potatoes
4 stalks celery
1 cup of spinach leaves to stir in at the end
1.5 tablespoons of curry powder
1 teaspoon salt
1/2 teaspoon ground ginger
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
Instructions
Saute the onion in coconut oil on low - medium for a good 5-10 mins. Then add in spices for a minute or two and then the chicken to fry for 3-5 mins. Then add all the other ingredients and simmer on medium for 10-15mins except spinach (stir this in at the end). Check chicken is cooked by cutting to see if white on the inside. Serve with brown rice.
For a low carb version, omit potatoes and serve with cauliflower rice.
For a vegan version replace chicken with extra can of chickpeas.
I like to double this recipe and put in the freezer. To make in the pressure cooker click here
