Kid Friendly Chicken Curry

I love this chicken curry. Its super tasty, kid friendly and can be made low carb, vegan and is freezer friendly and absolutely jam packed with veggies!! If you make with cauliflower rice you can get a total of 7 veggies in there!

RECIPE

4 servings, GF, DF

Ingredients

  • 2 tablespoons coconut oil

  • 200g chicken breast of thigh cut into cubes

  • 1 can chickpeas

  • 1 can coconut milk (preferably with the ingredients - just coconut and water)

  • 1 onion

  • 3 carrots

  • 200g potatoes

  • 2 stalks celery

  • 1 cup of spinach leaves to stir in at the end

  • 1.5 tablespoons of curry powder

  • 1 teaspoon salt

  • 1/2 teaspoon ground ginger

  • 1/8 teaspoon black pepper

  • 1/8 teaspoon cayenne pepper

    Instructions

    Saute the onion for a few minutes in oil, then deglaze the bottom of the instant pot with a bit of water. Then add the rest of the ingredients in (without the spinach) and then pressure cook for 5 mins. Stir in spinach at the end.

  • For a low carb version, serve with cauliflower rice.

  • For a vegan version replace chicken with extra can of chickpeas.

    I like to double this recipe and put in the freezer.
