Savory Egg Muffins

Makes 12 muffins GF

Adapted from ‘‘My Kids Lick the Bowl’’

Ingredients

  • 5 eggs

  • 350g cauliflower

  • 1/2 cup spring onions

  • 1 cup tasty grated cheese

  • 1/4 teaspoon salt

  • Tomato slices for garnish

    Instructions

    Whisk eggs. The blitz cauliflower in food processor. Combine remainder of ingredients and add seasoning and cheese. Mix, then fill greased muffin trays with the mixture, top with sliced tomatoes, then bake for 20 mins at 180 degrees.
