‘Hulk Pancakes’
Adding spinach into your breakfast will help you start your day right with extra fibre and magnesium. I called it ‘hulk pancakes’ to try and get some more greens into my son and now he asks for it every day! I’m a huge believer in trying to get vegetables into breakfast otherwise it’s a lost opportunity to get some of those 10 fruit and veggie in per day.
I also add in yoghurt and lots of chopped nuts and nut butter to make it more filling, avoiding that mid morning sugar crash.
RECIPE
Ingredients
Serves 4 (DF option, GF option)
1 3/4 cup oats or quinoa flakes
2 cups almond milk (or dairy milk)
3 eggs
1 banana
1 cup spinach
1 teaspoon cinnamon
1 teaspoon vanilla bean paste’
Instructions
Mix all ingredients together in a blender. Pour quarter of a cup of mixture into fry pan at once time, and cook 1-2 mins per side, flip once bubbling on the top surface.
Serve with berries, yoghurt and nuts as well as your favourite nut butter.
Watch out for additives in nut butter - I prefer pics as my favourite brand.
It’s preferable to make almond milk if possible as store bought has a lot of additives, otherwise use dairy milk if you can tolerate this.
