Simple, overnight no knead bread

This is literally the easiest bread ever. Unfortunately, not gluten free - but for those that can eat gluten delicious indeed. It requires minimal work just organisation to mix the ingredients overnight.

Adapted from ‘‘a pinch of yum’’

Ingredients

3 cups wholegrain flour (I like to use spelt)

1/2 teaspoon active dry yeast

1 1/2 teaspoon of salt

1 1/2 cups lukewarm water

Instructions

Mix all ingredients together in a bowl, until a dough is formed. Cover with tea towel overtop of bowl and keep airtight by placing a rubber band around the top rim of the bowl.

Leave overnight somewhere warm.

In the morning take off the teatowel, place dough on some baking paper sprinkled with a light dusting of flour and place the baking paper and dough in a round sieve to keep it’s shape.

Set over to 240 degrees C and place ceramic pot or dutch oven in (without the dough) for 30 mins to heat up, then take out of the oven, place the baking paper and dough in the pot and place in the oven with lid on for 30 mins. After 30 mins is up take off the lid and let the crust harden for 15 mins.

Take out and enjoy!
