Avocado Pizza Bread

I came up with this idea because I forgot to pre mix the other bread I usually make for a Sunday soup + I had some avocado to us that was going off. I hope you enjoy my kids definitely did!

Recipe

Makes 1 large pizza

Ingredients

1.5 cup of wholemeal spelt or wheat flour

1 avocado

1 big handful of spinach (optional)

1 teaspoon of instant yeast

1 cup warm water

1 teaspoon sugar

1 tablespoon EV olive oil

1/2 teaspoon salt

Instructions

Get 1 cup of warm water and if using spinach as well put in blender to create green water (otherwise skip this step - although you can’t taste it I promise and it adds extra nutritional value). Put water into medium sized bowl and add 1 teaspoon sugar and mix until dissolved then add 1 teaspoon yeast and let sit for 10 minutes until frothing. Then add flour salt and olive oil and mix. Once well mixed cover with a teatowel and seal it over with a rubber band. Let it sit somewhere warm for 2 hours until it rises. Once well risen turn oven onto 240 degrees C and place pizza stone in there to warm up. Place dough onto baking paper (i found this easiest with fork) and flatten until about 0,5cm thick (found this easiest to do with a fork as the dough is quite sticky). Put your toppings on (I used pesto and grated cheese) and cook for 12 mins.

Serve with some yummy soup or have on its own as a stand alone pizza. Enjoy
