Sugar free Fudge

There is nothing really sweet in this fudge. So it may take a little getting used to but it still tastes good and got the tick of approval from husband and child. If you need some sweetness you could add in a couple of dates or a teaspoon or two of maple syrup. It’s even got a burst of omega3 in it with addition of chia seeds.

Recipe

Serves 2, DF, GF

Ingredients

2 tablespoons almonds

1/2 cup peanut butter

2 tablespoons coconut oil

1/2 cup shredded coconut

1 tablespoon cacao powder

2 tablespoons chia seeds

1/2 teaspoon vanilla exract

1/2 orange zest and juice

Instructions

Put all ingredients together in a food processor and then lay out onto a piece of baking paper in a small container. Pop into the freezer for about 30 mins and it will be set. Sprinkle with dessicated coconut and enjoy with some berries.
