Kid Friendly Chicken Curry

I love this chicken curry. Its super tasty, kid friendly and can be made low carb, vegan and is freezer friendly and absolutely jam packed with veggies!! It comes out very budget friendly at $10 for 4 servings. Make it even cheaper for approx $8 if you add extra chickpeas and leave out the chicken.

RECIPE

4 servings, GF, DF

Ingredients

  • 2 tablespoons coconut oil

  • 200g chicken breast of thigh cut into cubes

  • 1 can chickpeas

  • 1 can coconut milk (preferably with the ingredients - just coconut and water)

  • 1 onion

  • 3 carrots

  • 200g potatoes

  • 2 stalks celery

  • 1 cup of spinach leaves to stir in at the end

  • 1.5 tablespoons of curry powder

  • 1 teaspoon salt

  • 1/2 teaspoon ground ginger

  • 1/8 teaspoon black pepper

  • 1/8 teaspoon cayenne pepper

    Instructions

    Saute the onion in coconut oil on low - medium for a good 5-10 mins. Then add in spices for a minute or two and then the chicken to fry for 2 mins. Then add all the other ingredients and simmer on medium for 10mins except spinach (stir this in at the end). Serve with brown rice.

  • For a low carb version, serve with cauliflower rice.

  • For a vegan version replace chicken with extra can of chickpeas.
