Tomato Veggie Soup

Super easy, and delicious. Perfect for a cold winter day. If your organised you could even serve it with some home made bread, if you’ve put the dough together the night before. Enjoy

Ingredients

GF DF Serves 6

2 tablespoons olive oil

2 medium onions, chopped

4 carrots - diced

1/2 bunch of celery chopped

1 capsican chopped

1 bottle of passata (480g)

1L of stock (chicken or veggie_

1 medium kumara chopped

1/4 pumpkin chopped

1 can butter beans or any white beans or lentils

2 big handfuls of spinach

1 teaspoon oregano

1 teaspoon rosemary

1 teaspoon basil

1/2 teaspoon salt

1/2 teaspoon chilli flakes

Instructions

Sautee onion in olive oil, for 4-5 mins, add all the remaining vegetables in except for the spinach and set on high for 15 minutes. Once done then release, stir in spinach and add salt and pepper and sprinkle with some feta and parsley. Enjoy.
