Buckwheat Porridge

I love to make this in my pressure cooker and so its right there ready to eat in the morning, but you can also make it on the stove. Makes for something different other than porridge.

GF DF Serves 4

Ingredients

  • 1 cup buckwheat groats

  • 1 1/2 cups almond or coconut milk

  • 1 1/2 cups water

  • 1/4 teaspoon vanilla bean paste

  • 1/2 teaspoon ground cinnamon optional

  • 2 dates chopped

  • One banana chopped

Instructions

Put all the ingredients into the instant pot and cook on high for 6 minutes. Its as easy as that - top with your favourite toppings - crushed nuts, flaxseed, berries and yoghurt.
