Salmon Cakes

This is a great way to get omega3 into the kids. However you can sub out 100g of any other white fish if your not a fan of salmon. You can do a thai flavour or more european flavour by swapping out the herbs.

RECIPE

DF, GF, Serves 2

Ingredients

1 tin 100g wild alaskan salmon (drained)

2 stalks spring onion chopped

1/2 red onion

1 garlic

1/4 teaspoon dried ginger or omit

1/4 teaspoon red curry paste or omit

1 tablespoon chopped coriander or parsley

1 tablespoon coconut flour

1 egg

1/4 teaspoon salt

1/2 cooked kumara (or leave out if low carb)

Instructions

Put all ingredients together in a food processor and blend. Heat pan with extra virgin olive oil and fry each side for 2 mins and pop into oven for 5 mins at 180 degrees to cook through. Otherwise you can bake for 30mins at 180C flipping them over at the 20 minute mark. Serve with mayo and some steamed greens eg brocoli, bok choy etc.
