I am loving this cauliflower pizza crust right now, for a Friday night dinner! Kids love it and its a great way to get veggies in.

Ingredients

  • 1 small- to medium-sized cauliflower head cut into large pieces, using just the florets and not the stems

  • 1/4 tsp salt

  • 1/2 tsp dried basil

  • 1/2 tsp dried oregano

  • 1/2 tsp garlic powder

  • 2 Tbsp almond meal

  • 1 Tbsp nutritional yeast

  • 1 Tbsp olive oil

  • 1 large egg

Recipe

  1. Preheat oven to 230 degrees C and line a baking tray with baking paper (that has a little oil on it)

  2. Take your cauliflower florets and put in the food processor and pulse until it is riced up. Then heat in the microwave for 3-4 minutes. Once cooled off wrap the cauliflower in a teatowel and squeeze out all the water. You need to squeeze really hard to get out all the water or the pizza base will go soggy.

  3. Add all your spices, almond meal, yeast, egg and olive oil. Mix the mixture to incorporate all the ingredients

  4. Once mixed together, use your hands to form your dough into a ball. Place the dough on the baking paper and press down to form a thin circle shape.

  5. Once the pizza in the shape you would like, put it on the hot baking sheet in the oven.

  6. Bake for about 12 minutes, or until it starts to turn golden brown and the edges start to crisp. Remove from oven.

  7. Add your toppings and bake for another 5 -10 minutes, or until your toppings looks delicious and the crust starts to crisp.

  8. To this pizza I added beetroot humus and leftover roast chicken, capsican, spinach and feta.
