Baked fish on vegetable couscous and roast vegetable halloumi salad

Never throw away your brocoli and cauli stalks again! this meal uses every part of the vegetable.

Recipe

Get a handful of coriander, 1/2 lemon zest, 2 tablespoons coconut oil and 3 stalks spring onion and 2 cloves of garlic. Blended in food processor and then spread on fish and baked for 20 mins with some chopped halloumi beside it drizzled with a little EV olive oil.

Get some veggies that need using - brocoli stalks, some half eaten parsnip and carrot and blended in food processor with a handful of coriander and a squeeze of lemon juice.

Then take some leftover roast pumpkin, throw in some greens, pumpkin seeds, avocado and then added in the halloumi (could use feta if no halloumi).
